白斑狗鱼含肉率及其营养价值的分析

    摘要:

    测定了6尾白斑狗鱼(Esoxlucius)的含肉率和营养成分,并与部分淡水优质经济鱼类进行了比较。结果表明:白斑狗鱼含肉率为64.8%,粗蛋白含量和脂肪含量分别为19.1%和1.4%,17种氨基酸总量为17.38%,其中7种必需氨基酸总量为8.14%,鲜味氨基酸总量为6.36%。必需氨基酸总量占氨基酸总量的45.73%,低于鸡蛋蛋白模式,但明显高于WHO/FAO模式。必需氨基酸指数为76.35,根据化学评分计算结果,得出第一限制性氨基酸为缬氨酸,第二限制性氨基酸为蛋氨酸,第三限制性氨基酸为异亮氨酸。结果提示,白斑狗鱼是一种营养价值较高的鱼类。

    Abstract:

    The rate of flesh content and nutritional quality of six Esox lucius were measured and compared with some high quality fresh water fishes.The results showed that:the rate of flesh content of E.lucius was 64.8%,the crude protein content and fat content were 19.1% and 1.4% respectively,the total content of 17 amino acids was 17.38%,in which the content of 7 essential amino acids was 8.14%,the content of delicious amino acid was 6.36%.The essential amino acids accounted for 45.73% of the total amino acids,which was lower than egg protein pattern but higher than WHO/FAO pattern significantly.The EAAI was 76.35,the first limiting amino acid was Valine,the second one was Methionine,and the third one was Isoleucine.Based on all of the analyses,it can be concluded that E.lucius was a species of high quality in nutrition.
